West Cork Distillers is one of the largest wholly Irish-owned whiskey producers in the country, founded in 2003 by three childhood friends — Denis McCarthy, Ger McCarthy, and John O'Connell — in the small fishing village of Union Hall, County Cork. What began in the back room of Denis's house with two small pot stills has grown into a 12.5-acre production complex on Marsh Road, Skibbereen, which opened in 2020 and is described as the largest wholly Irish-owned distillery in Ireland. Running sixteen pot stills and three column stills around the clock, the facility produces approximately 16.5 million litres of alcohol annually, selling West Cork Irish Whiskey in almost 70 countries worldwide.

History
Denis McCarthy and Ger McCarthy were deep-sea trawlermen from the small fishing community of Union Hall, County Cork — men accustomed to hard work, practical problem-solving, and the rhythms of the Atlantic. John O'Connell brought a different perspective: research and development science in the food and beverage industry. The three childhood friends pooled their skills and in 2003 started distilling with two small pot stills purchased second-hand from a schnapps producer in Switzerland, operating from the back room of Denis's house.
The early years were characterised by the same resourcefulness that had defined Denis and Ger's fishing careers. The business grew methodically, reinvesting earnings into capacity. In 2014, outgrowing the Union Hall site, the company relocated to a larger facility on Market Street, Skibbereen — the market town just a few miles inland from their starting point. Growth continued to accelerate: demand for Irish whiskey was expanding rapidly in export markets, and West Cork was well positioned to serve both own-brand and private-label customers.
In 2020 West Cork Distillers moved to the current Marsh Road facility in Skibbereen — a purpose-built, state-of-the-art production complex designed for industrial-scale whiskey making. The site operates sixteen pot stills and three column stills on a 24-hours-a-day, six-days-a-week schedule. Eight bottling lines can process 9,000 bottles per hour. Twelve on-site warehouses store up to 200,000 casks simultaneously. The company employs over 140 people and has established itself as a significant force in global Irish whiskey — not just under its own brands, but as a major producer of private-label and retailer own-brand ranges for customers across its 70-country distribution network.
Production
Sixteen pot stills are operated at half-fill capacity to maximise copper-spirit vapour interaction and flavour development — a deliberate production choice that prioritises quality over volume efficiency. Three column stills produce grain whiskey for blending. Annual production is approximately 16.5 million litres of pure alcohol. Eight bottling lines at 9,000 bottles per hour provide enormous finished-goods throughput. Twelve warehouses store up to 200,000 casks. Maturation is predominantly in ex-bourbon American oak casks, with the Bog Oak Charred Cask expression using 5,000-year-old bog oak staves — a uniquely Irish cask source.
Tasting Character
West Cork Irish Whiskey is defined by value, accessibility, and clean execution. The Bourbon Cask expression is vanilla-forward, approachable, and smooth — a gateway Irish whiskey that delivers consistent satisfaction. The Black Cask uses charred casks for a richer, slightly smokier character with more depth. The Bog Oak Charred Cask is the most distinctive: aged in barrels using 5,000-year-old Irish bog oak staves that impart an earthy, resinous complexity found nowhere else. Single malt expressions demonstrate the quality achievable at this scale. Garnish Island Gin is a clean, contemporary Irish craft gin; Two Trees Vodka is a premium triple-distilled expression.

Visiting
West Cork Distillers does not operate a formal open-to-the-public visitor centre. Guided tours of the Marsh Road production facility are available by prior email enquiry, covering the distillation process, barrel storage, and the philosophy behind the brand.
