Tipperary Boutique Distillery is a small, independent farm distillery on Ballindoney Farm in County Tipperary, Ireland, operating from the heart of Ireland's famous Golden Vale — the rich agricultural belt whose exceptional soil and pure water have shaped Irish food and drink for centuries. Founded by Managing Director Jennifer Nickerson, her father Stuart Nickerson (a veteran Scottish distillery professional), and farmer Liam Ahearn, whose family has farmed Ballindoney for over 200 years, the distillery traces its roots to 2016 and completed its own on-site distillation facility in 2020. The philosophy is radical traceability: "we can point to the field where your whiskey comes from."

Named Best Single Malt Distillery in Ireland, Tipperary has earned multiple Gold and Silver medals at the Berlin International Spirits Competition and a Silver at the Tokyo Whisky & Spirits Competition in 2025, demonstrating that farm-distilled Irish whiskey can compete at the highest international level.

History

Jennifer Nickerson brought together three distinct areas of expertise: her own business acumen and passion for Irish whiskey; her father Stuart Nickerson's decades of distillery experience across Scotland and Ireland; and Liam Ahearn's deep agricultural heritage at Ballindoney Farm, where the Ahearn family has farmed the same land for over two centuries.

The business launched in March 2016 with the release of The Rising — an independently sourced Irish single malt — as a vehicle to establish the brand while the on-site facility was planned and built. The first releases were deliberately labelled as "Boutique Selection" to signal the quality focus without yet owning the production infrastructure. Over the following years, Jennifer and Stuart guided the brand's development through competition entries and market building, earning critical attention before own-site spirit was ready.

The Ballindoney distillery was completed and commissioned in 2020. From that point, all Tipperary production has been distilled, matured, and bottled on the farm, with barley grown on the estate or sourced from trusted local farmers. The distillery has since expanded its range to include multiple cask-finish expressions under the Homegrown label, as well as Farmhouse Gin and The 80 Irish Apple Brandy — the latter using Golden Vale apples grown in Tipperary's orchards.

Production

Tipperary Boutique Distillery operates on Ballindoney Farm, drawing water from the farm's own sources within the Golden Vale. Barley used in the whiskey is home-grown where possible, with the remainder sourced locally from trusted growers in County Tipperary — establishing a direct farm-to-glass provenance unusual in Irish whiskey. The distillery produces Irish single malt whiskey using traditional pot still production methods. Cask strategy is diverse and experimental: the Homegrown range has been released in Sherry Cask, Sake Cask, Rioja Cask, and Mezcal Cask finishes, reflecting an exploratory approach to maturation. Apple brandy production uses Golden Vale orchard fruit.

Tasting Character

Tipperary's whiskeys reflect the richness of the Golden Vale terroir — a malty, creamy base spirit that takes well to an unusually diverse range of cask finishes. The Watershed Single Malt showcases the clean, fruit-forward character of the base spirit. The Homegrown range demonstrates how the same spirit transforms under different cask regimes: the Sherry Cask delivers dried fruit and spice warmth; the Sake Cask brings delicate rice and floral notes; the Rioja Cask imparts red berry and tannic edge; the Mezcal Cask lends subtle smoke and earthy character. The 80 Irish Apple Brandy is dry, aromatic, and distinctly Tipperary in character. Farmhouse Gin draws on Golden Vale botanicals for a grounded, herbaceous Irish gin style.
