
Mortlach Distillery
Mortlach Distillery is Dufftown's oldest and most storied distillery, established in 1823 as the first legal distillery in the town. Owned by Diageo, Mortlach is nicknamed "The Beast of Dufftown" for its exceptionally rich, powerful, and notably meaty character — a stark outlier in the typically gentle Speyside landscape. The distillery runs a uniquely complex 2.81-times distillation process across six stills, producing a copper-starved, heavily sulphur-influenced spirit unlike anything else in Scottish whisky. Mortlach spirit is a key component in several Johnnie Walker bottlings.

History
Mortlach was established in 1823 by James Findlater in the wake of the Excise Act of 1823, which legalised and encouraged lawful distillation across Scotland. It was built on the site of an older illicit distillery and became Dufftown's first licensed producer — predating Glenfiddich Distillery by 64 years. Early production was modest: approximately 50 gallons weekly, sold directly in small casks to local gentry at around 9 shillings per gallon.
Between 1823 and 1853, Mortlach changed hands repeatedly and at one point operated briefly as a brewery. In 1853, engineer George Cowie partnered with John Gordon as co-owner; by 1867 Cowie was the sole proprietor. His son Alexander Mitchell Cowie — who had studied medicine at Aberdeen University and worked in Hong Kong — took control in 1896. Under the Cowies' stewardship, Mortlach became a well-regarded distillery. Working with distillery architect Charles C. Doig, the distillery was significantly expanded in 1897, including the installation of the distinctive 2.81-times distillation process, a railway siding connection to Dufftown via the Strathspey line, and electrical lighting — among the first in the region.
John Walker and Sons acquired Mortlach in 1923. The Distillers Company absorbed it in 1925, and Guinness acquired The Distillers Company in 1986. In 1997, Guinness merged with Grand Metropolitan to form Diageo, the current owner. Mortlach was relaunched as a premium single malt range in 2014 with the current age-statement expressions. In 2023, Gordon & MacPhail's Connoisseurs Choice 31 Year Old (distilled at Mortlach in 1989) won Whisky of the Year at the International Whisky Competition.
Production
Mortlach operates three wash stills and three spirit stills — six stills in total — with an annual capacity of approximately 3,700,000 litres. Water is drawn from the Dykehead Catsvraig spring. The defining production characteristic is the 2.81-times distillation process established in 1897: a proportion of the spirit undergoes additional distillation passes through the so-called "Wee Witchie" spirit still — the smallest of the six — creating what is known as "dud runs" that add a particularly meaty, sulphurous quality to the new make. Unlike most Speyside distilleries, Mortlach uses traditional worm tubs as condensers rather than modern shell-and-tube condensers, limiting copper contact and preserving the heavy, savoury character. Fermentation times are kept relatively short and the stills are run quickly, further reinforcing the copper-starved profile.
Tasting Character
Mortlach is unmistakably rich, savoury, and meaty — the most characterful whisky produced in Dufftown and arguably the most atypical in all of Speyside. The 2.81-times distillation process and worm tub condensers combine to produce a spirit loaded with sulphurous, beefy notes that translate in maturation into beef broth, dried fruit, dark chocolate, toffee, leather, and warm spice. The finish is long and savoury, with depth that rewards extended maturation. The 12 year old is the accessible entry point; the 16 is where the full beast emerges; the 20 year old adds refined complexity over the raw power.
