
Dailuaine Distillery
Dailuaine Distillery is a substantial Diageo-owned Speyside distillery located near Charlestown of Aberlour, Strathspey, on the banks of the Bailliemullich Burn. The name derives from the Gaelic An dail uaine — "the green valley." Founded in 1852 by William Mackenzie, Dailuaine is one of Speyside's larger distilleries, operating six pot stills and producing some 3.37 million litres of spirit annually. Approximately 98% of that output flows directly into Diageo's blended Scotch portfolio — above all Johnnie Walker. Only the 16 Year Old Flora & Fauna bottling is widely available as a single malt, making Dailuaine a rare and rewarding find for enthusiasts who seek it out.

History
William Mackenzie founded Dailuaine in 1852. When he died in 1865, his widow leased the distillery to James Fleming, a banker from Aberlour, who later became a significant figure in the Speyside whisky trade. In 1891 the Dailuaine-Glenlivet Distillery Ltd was formed to formalise operations.
A landmark event came in 1899 when the celebrated architect Charles C. Doig designed a major rebuild of the distillery, adding a pagoda-style roof that subsequently became the standard design for Scottish distilleries — Doig's signature contribution to the visual identity of the Scotch whisky industry. This iconic structure was destroyed in a catastrophic fire in 1917; it took three years to rebuild, and production resumed around 1920.
In 1898, Dailuaine merged with Talisker Distillery to form Dailuaine-Talisker Distilleries Ltd. In 1916 the distillery was sold to three of the great blending houses: John Dewar & Sons, John Walker & Sons, and James Buchanan & Co. — all determined to secure high-quality Speyside malt for their blends. The Distillers Company Limited (DCL) acquired it in 1925, and United Distillers (later Diageo) took over in 1987. Since 1983, malt is produced off-site and delivered to the distillery. The still count was expanded from four to six in 1960, reflecting the demand for Dailuaine's quality blending spirit.
Production
Dailuaine operates three wash stills (18,700 litres each) and three spirit stills (20,500 litres each), for a total of six pot stills. Annual production capacity is approximately 3,370,000 litres of pure alcohol, making it one of the larger Speyside distilleries. Water is sourced from the Bailliemullich Burn. The distillery has used off-site malting since 1983. Maturation leans heavily on ex-Sherry casks, contributing to the characteristic rich, fruited house style.
Tasting Character
Dailuaine is oily and full-bodied, with prominent Sherry influence running through the core character. The nose presents dried fruits — raisin, prune, sultana — alongside malty sweetness and a distinctive hint of umami depth. The palate is bold and rounded, with dark chocolate, malt, and warming spice. A characteristic hint of sulphur and rubber (a legacy of traditional condensing methods) appears in some expressions, adding to the complexity. Independent bottlings occasionally reveal touches of smoke in older variants. The 16 Year Old Flora & Fauna expression — bottled at 43% ABV — offers the most accessible window into this substantial and rewarding malt.
