The brand is named in tribute to Angus Scott, a family ancestor who allegedly distilled illegally in the 1780s before emigrating to America, where family history holds he became a successful bourbon producer. History

Scott's Irish Distillery Ltd was incorporated on 1 October 2019, making it one of Northern Ireland's youngest distillery ventures. The main distillery building was completed in August 2020, and first whisky production took place that same year. As of 2024, the site was still undergoing expansion with construction works continuing on the broader estate.

The distillery is Fermanagh's first new whiskey distillery since the contemporary craft revival began, representing a significant moment for a county historically associated with Bushmills (just over the border in Antrim) and the broader Northern Irish whiskey tradition.
