
Nc'nean Distillery
Nc'nean Distillery (pronounced "Nk-nee-an") is a sustainability-focused organic single malt whisky distillery on the remote Morvern peninsula in the West Highlands, beside the Sound of Mull. Founded by Annabel Thomas in 2017 on her family's Drimnin estate, Nc'nean takes its name from Neachneohain — a Scottish Gaelic goddess of the spirit world, translating as "Queen of Spirits." The distillery is the first in the UK to achieve verified net zero carbon emissions during whisky production (scopes 1 and 2), is B Corp certified, uses 100% organic Scottish barley, powers itself entirely from renewable energy, and packages all products in 100% recycled glass. It is accessible only by single-track road or boat, and recognised by The Guardian as one of Scotland's top ten distilleries to visit.

History
Annabel Thomas left a career in London in 2013 and spent four years raising funds and developing the distillery concept from scratch. Funding came from family, friends, loans, seed investors, and a €1.9 million EU grant channelled through the Scottish Government. Broadcaster Jeremy Paxman holds a 0.6% stake. The distillery's original master distiller, Jim Swan — one of the most celebrated whisky consultants in the industry — passed away suddenly just before the first distillation in 2017; current master distiller Gordon Wood, previously of Diageo, took the lead.
Production commenced in 2017. The first single malt whisky was released in 2020, following the three-year minimum maturation required for Scotch whisky. The inaugural bottle sold at auction in August 2020 for £41,004, with the proceeds going to charity. In March 2020, the distillery raised £1.7 million for expansion. B Corp certification was achieved in February 2022. In 2024, a free postage bottle return scheme was introduced to close the recycling loop on packaging.
Production
Nc'nean operates one wash still and one spirit still, with an annual capacity of approximately 100,000 litres — small even by craft distillery standards. Water comes from two springs on the Drimnin estate. The distillery uses 100% organic Scottish barley throughout. Long mashing and fermentation times and experimental yeast selections are central to the house style. For maturation, ex-bourbon and STR (shaved, toasted, re-charred) wine casks are used, contributing the fruity, floral character that defines the spirit. The Botanical Spirit is a distinct product — the distillery's unaged new-make malt spirit redistilled with botanicals including bog myrtle, grapefruit, and thyme, with only small amounts of juniper, so the other botanicals lead the flavour.
Tasting Character
Nc'nean produces unpeated, elegant, and distinctly fruity organic single malt. The signature Organic Single Malt shows citrus, peach, apricot, and warm spice — described by the distillery as "fruity and elegant." The Cask Strength release is richer, shifting toward a "buttery and chocolatey" profile with more intensity from concentrated spirit. The Botanical Spirit is not classified as a gin; with bog myrtle, grapefruit, and thyme leading over juniper, it occupies a unique category. Limited Quiet Rebels editions (named after individual distillery staff) and the Huntress series offer collaborative and experimental expressions.
