In the Welsh Wind Distillery
In the Welsh Wind Distillery is a coastal craft distillery founded in January 2018 in Tanygroes, Ceredigion, on the wind-swept Atlantic fringe of West Wales, just north of Cardigan. One of Wales's most committed farm-to-bottle producers, the distillery grows and sources grain locally — barley from within 10 miles of the site — and distils all its spirits on-site, from gin and vodka through to Welsh single malt whisky.
The distillery's debut whisky, produced from Welsh barley, was released in April 2024, marking a milestone for the Welsh whisky scene. A green-malt expression using 100% Welsh-grown grain sourced entirely from within 10 miles of the distillery is planned for release in autumn 2025. With its Atlantic-facing location, the Preseli Hills water source, and a philosophy rooted in the artisan food-and-drink movement of west Wales, In the Welsh Wind occupies a distinct and meaningful place on the British spirits map.

History
The distillery was founded in January 2018, establishing itself in Tanygroes, a small settlement in Ceredigion county. The founders' vision was to build a distillery that genuinely reflected its immediate landscape — using local grain, local water, and a hands-on, grain-to-glass approach that distinguished it from larger or more geographically detached producers.
The first own-brand gin, Signature Style, launched in July 2020. A cask-aged version — rested in Palo Cortado sherry casks for five to six months — followed in spring 2021 and won a Master medal at the Gin Masters that year; the standard Signature Style also won Gold. Three Grain Vodka, produced from barley and rye both malted and distilled on-site then blended with a complementary white spirit, joined the portfolio in November 2022.
The distillery's debut single malt whisky appeared in April 2024 at 48% ABV, bottled in a limited run of 674 bottles at £95 RRP. This represented the culmination of several years of building distilling capacity and maturing spirit on-site. A future green-malt expression — using barley sourced entirely from within 10 miles of the distillery — is planned for autumn 2025, doubling down on the local terroir philosophy.
Production
All spirits at In the Welsh Wind are produced from grain distilled on-site; there is no bought-in base spirit. The distillery uses Welsh barley — sourced as locally as possible — throughout its range. Water is drawn from the Preseli Hills. The debut single malt was released at 48% ABV after maturing in casks on-site in the Atlantic-influenced coastal climate of west Wales.
The Signature Style Gin is made with botanicals inspired by 19th-century cargo imports into west Wales ports. The Three Grain Vodka uses barley and rye both malted and distilled at the distillery. The planned green-malt whisky expression will use 100% Welsh grain sourced within 10 miles.
Tasting Character
The flagship Signature Style Gin (43% ABV) is smooth and oil-rich, with botanicals evoking the historic trade cargoes of west Wales's Atlantic-facing ports. It won Gold at the Gin Masters 2021. The cask-aged Signature Style, finished in Palo Cortado sherry casks, adds dried fruit depth and earned a Master medal at the same competition.
The debut single malt whisky (48% ABV, April 2024) reflects Ceredigion provenance: Welsh barley, local water, and Atlantic-influenced maturation. The Eccentric Gin range celebrates Welsh cities, coastlines, and indigenous botanicals in a series of limited editions. Three Grain Vodka is clean, textured, and grain-forward.
