Eden Mill Distillery is a Scotch whisky and gin producer on the banks of the Eden Estuary near Guardbridge, Fife, approximately three miles northwest of St Andrews. Established in 2014 as Scotland's first combined distillery and brewery, the site has a long distilling heritage: the Haig family operated a whisky distillery here in the 19th century before the buildings became a paper mill (1860–2008). Eden Mill took that heritage and built something new — a localised, terroir-led spirit producer using farm ingredients and seasonal botanicals from the surrounding Fife countryside. A brand new, purpose-built distillery opened in early 2025 on the 38-acre Eden Campus (owned by the University of St Andrews), significantly expanding production capacity to just over one million litres of new-make spirit annually.

History

Brewing began at the Guardbridge site in 2012. In 2014, Eden Mill became Scotland's first combined distillery and brewery when it began producing Scotch whisky and gin alongside beer. The original buildings occupied a former paper mill on the River Eden, a site with 19th-century connections to the Haig distilling dynasty — one of Scotland's oldest and most storied distilling families. Beer production wound down progressively from 2018 and ceased entirely in 2021, allowing the team to focus exclusively on whisky and gin.

The distillery was acquired by Inverleith LLP in 2021. In 2023, construction began on a brand new, significantly larger distillery building on the Eden Campus. The new facility became operational in early 2025 and opened to visitors in April 2025, with the full visitor centre launching in October 2025. In December 2025, Scottish entrepreneur Tony Banks acquired the business through Ruby Capital. The new distillery capacity — just over one million litres of new-make spirit per year — represents a dramatic scaling-up from the original operation's 60,000-litre capacity.

Production

The new Eden Campus distillery operates at approximately 1,000,000 litres of new-make spirit capacity annually, a step-change from the original facility. The Eden Campus covers 38 acres, owned by the University of St Andrews, on the banks of the Eden Estuary. Eden Mill's localised approach remains central: working with local farmers and artisans to source fresh, seasonal botanicals for gin and emphasising provenance in whisky production. A Cask Owners Club is available for private cask investment.

Tasting Character

Eden Mill follows a clean, fruity Lowland-adjacent style consistent with the East Fife terroir and the proximity of the Eden Estuary. The whisky programme emphasises provenance and local character. The gin range — Original Gin, Love Gin, and Golf Gin — reflects the team's localised botanical approach, with seasonal and place-specific ingredients adding character to each expression. Love Gin is perhaps the most widely known expression, with floral and berry notes. Golf Gin, available at nearby golf courses and through the distillery, reflects the St Andrews identity. Ready-to-drink cocktails and gin liqueurs round out the range.

Visiting

The new Eden Campus visitor centre opened in April 2025, with full facilities launching in October 2025. Experiences on offer include Classic Gin Tours, Classic Whisky Tours, and cocktail experiences at The Lookout Bar. A distillery golf simulator is available, befitting the St Andrews location.
