Dublin Liberties Distillery
Dublin Liberties Distillery is an Irish whiskey distillery located at 33 Mill Street, Dublin 8, in the historic Liberties district — an area with deep roots in Irish whiskey production stretching back centuries. Opened in 2018, the distillery was owned and operated by Quintessential Brands, which used it to produce whiskeys under its Liberties and Dubliner brand families, along with contracted brands including Dead Rabbit Irish Whiskey. In May 2025, Quintessential Brands temporarily paused production at the distillery, citing assessment of market conditions. The visitor centre also closed at that time. The company stated its commitment to resuming Irish whiskey production at the site, but as of early 2026 the distillery remains silent.

History
The Liberties neighbourhood of Dublin was historically the engine of Irish whiskey production before the industry's catastrophic decline in the early 20th century. Opening a new distillery on Mill Street in 2018 was therefore a deliberate act of heritage revival — Quintessential Brands positioning the Dublin Liberties Distillery as part of the broader Irish whiskey renaissance.
The distillery built a range that drew directly on its neighbourhood heritage: the Liberties single malt range named expressions after the area's history (Oak Devil, Copper Alley, Murder Lane, Keeper's Coin, King of Hell), while the Dubliner range offered accessible blended expressions for wider markets. The Dead Rabbit Irish Whiskey — associated with the celebrated New York cocktail bar of the same name, renowned for its Irish heritage theme — was produced here as a contracted brand.
In May 2025 Quintessential Brands announced the temporary halt of production, a reflection of challenging conditions in the premium Irish whiskey market. Some production staff were affected. The company's office continues to operate from the Mill Street address, and bottles from the existing aged inventory remain available through retail channels.
Production
The distillery operated on Mill Street, Dublin 8, producing Irish single malt whiskey. The Liberties range includes aged single malts from Oak Devil through to the premium King of Hell (27 Year Old), the latter sourced from older stock predating the distillery's own production. The Dubliner range covers blended Irish whiskey expressions including the Bourbon Cask, Honeycomb Liqueur, and Smoked Stout Beer Cask variants. As of May 2025, active production is paused.
Tasting Character
The Liberties single malt range covers a wide spectrum of age and cask influence. The entry-level Oak Devil is a fresh and accessible Irish single malt; Copper Alley (10 Year Old) adds maturity and complexity; Murder Lane (13 Year Old) deepens further into dried fruit and warming spice; Keeper's Coin (16 Year Old) is a sophisticated, fully rounded expression; and the King of Hell (27 Year Old) is an exceptionally rich, aged whiskey with deep dark fruit and oak character. The Dubliner range emphasises approachability and cocktail versatility, with Bourbon Cask being the most popular expression.
