Daftmill Distillery is an ultra-rare Lowland farm distillery in the Howe of Fife, operating from a converted barn at Daftmill Farm near Cupar, Fife. Licenced by HMRC on St Andrews Day — 30 November 2005 — with first distillation on 16 December 2005, it was set up by brothers Francis and Ian Cuthbert on their family's working arable farm. One of Scotland's smallest and most coveted distilleries, Daftmill produces only tiny seasonal batches, using barley grown entirely on the farm, and ages its whisky for a minimum of ten years before release — far exceeding the legal three-year minimum. The result is whisky of exceptional quality that consistently sells out within hours and commands significant premiums at auction.

History

The Cuthbert family has farmed in the Howe of Fife for generations, growing malting barley, potatoes, and raising beef cattle. The brothers Francis and Ian Cuthbert applied for planning permission to convert the farm's old mill buildings into a distillery in 2003, receiving their HMRC distilling licence on 30 November 2005. The first whisky was produced on 16 December 2005 — an event that marked the revival of Lowland distilling in Fife after a long absence.

Daftmill's model is entirely farm-led: distillation only takes place during two quiet periods in the agricultural calendar — approximately two months in winter and two months in summer — when fieldwork permits. Francis Cuthbert distils entirely by hand with minimal automation. Spent grains feed the farm's cattle; spent lees return to the fields as fertiliser. The 2005 inaugural production year yielded its first official release as Daftmill 2005 12-Year Inaugural Release, and subsequent annual Summer and Winter batch releases have become among Scotland's most keenly anticipated whisky events.

Production

Daftmill operates one wash still (2,500 litres) and one spirit still (1,500 litres), giving a maximum annual output of just 20,000 litres of pure alcohol — one of Scotland's smallest production volumes. All barley is grown on the farm and is unpeated. Water is drawn from the farm's own artesian well. Maturation takes place in a combination of cask types; releases typically show a minimum of ten years in oak, with ex-bourbon casks forming the bulk of the programme. Some expressions incorporate ex-Sherry cask proportions. The distillery has no visitor facilities and sells exclusively through Berry Bros. & Rudd and a small network of specialist retailers.

Tasting Character

Daftmill produces an elegant, refined Lowland single malt. The house style is delicate and clean: subtle cereal sweetness, fresh orchard fruit (apple, pear), light vanilla, and a gentle floral quality characteristic of Lowland distilleries. Releases aged a minimum of ten years show a fuller development, with creamy texture and soft oak integration. The occasional ex-Sherry cask proportions add a gentle dried fruit note without overwhelming the distillery's naturally light character. Whisky enthusiasts prize Daftmill for its purity, restraint, and unmistakeable sense of Fife terroir — barley, spring water, and the quiet seasons of a working farm distilled into the glass.

Daftmill is not open to visitors. The distillery operates as a working farm with no visitor facilities, tours, or on-site shop.
