Micro-distillery in Newtown, Ballyvaughan, County Clare, set within the unique limestone karst landscape of the Burren — one of Ireland's most distinctive and protected natural environments. Founded by Noel Ó Lochlainn, the concept was developed from 2013 with the distillery opening in late 2019. Whiskey distillation commenced in October 2019, marking the return of whiskey production to County Clare for the first time in over a century. Burren produces approximately 150 casks per year of single estate Irish whiskey using the ancient Sean Gael method — a revival of old Irish distilling traditions that predate the modern triple-distilled style associated with mainstream Irish whiskey.

History

Noel Ó Lochlainn began developing the Burren Distillers project in 2013, driven by an ambition to revive the ancient Irish whiskey-making tradition of the west of Ireland. The concept drew on the Sean Gael (old Irish) distilling method — a style distinct from the modern triple-distilled, lighter Irish whiskey that became dominant in the 20th century. Planning, building, and equipping the micro-distillery took six years; the facility opened in late 2019 and whiskey distillation began in October of that year.

The distillery bills itself as the first micro-distillery in County Clare in over a century and as the first revival of the Sean Gael method in more than a hundred years. Production is deliberately small-scale — approximately 150 casks per year — with an emphasis on quality and provenance over volume. The limestone-rich Burren landscape, a UNESCO-recognised karst terrain of extraordinary natural character, provides both the water source and the conceptual identity for the whiskey's terroir story.

Production

Burren Distillers uses Irish heritage barley varieties, floor-malted by hand on-site in the traditional manner. Water comes from the Burren's limestone aquifer, which produces a distinctive mineral-rich, soft water ideal for whiskey production. Distillation uses direct-fired copper pot stills. Maturation takes place in Irish sessile oak casks made from locally sourced, sustainably harvested timber — a highly unusual choice that distinguishes Burren's whiskey from the industry norm of American or European oak. Production is approximately 150 casks annually, placing it firmly in the micro-distillery category. The entire operation is described as "slow by design, expressive by nature, and deeply rooted in heritage."

Tasting Character

Burren Irish Whiskey carries the mineral influence of the Burren's limestone water — a subtle chalk-and-mineral character that underpins the cereal and fruit notes typical of single malt Irish whiskey. The use of Irish sessile oak for maturation casks introduces a distinctly different wood character from the vanilla and caramel of American oak or the dried fruit of European sherry oak: Irish sessile oak tends towards spice, nut, and an earthy quality that suits the distillery's heritage positioning. The Sean Gael method — emphasising traditional pot still production and unhurried maturation — aims for a richer, more characterful spirit than modern, highly distilled Irish whiskey.
