Balblair is one of Scotland's oldest distilleries, established in 1790 by John Ross in the village of Edderton, Ross-shire, on the southern shore of the Dornoch Firth. Unofficial records suggest distilling at this location may date back to 1749. The distillery is owned by International Beverage Holdings Ltd (through Inver House Distillers), who acquired it in 1996. Balblair produces fruity, honeyed Highland single malts from water drawn from the Allt Dearg burn. The wash still runs 20,000 litres and the spirit still 8,500 litres, giving an annual capacity of 1.8 million litres. The distillery famously maintains records dating to 1800, with the earliest ledger entry documenting a whisky sale.

History

John Ross founded Balblair in 1790, and the Ross family operated the distillery for over a century. Unofficial records of distilling on the same estate date back to 1749, which would make this one of the earliest recorded production sites in Scotland. John's son Andrew joined the business in 1824. The distillery was under the tenancy of the Ross family until 1894, when Alexander Cowan took over.

In 1895 the distillery was rebuilt by renowned distillery architect Charles C. Doig, relocated to sit closer to the Edderton Railway Station on the Inverness and Ross-shire Railway — essential for transporting spirit and receiving supplies. The distillery closed between 1911 and 1948, unable to sustain production through the economic pressures of two world wars and the ensuing depression. Robert Cumming purchased the freehold in 1948 and expanded operations, revitalising the distillery through the post-war whisky boom. In 1970 Cumming retired and sold to Hiram Walker. Inver House Distillers acquired Balblair in 1996. Until April 2019 the distillery released exclusively vintage-dated bottlings rather than age-stated expressions; that month, a permanent age-statement range was introduced: 12, 15, 18, and 25 Year Old. In 2012 the distillery featured in Ken Loach's acclaimed film The Angels' Share, and the visitor centre opened the same year.

Production

Water is drawn from the Allt Dearg burn — the "red burn" — the original source retained since the 1895 rebuild. The wash still runs at 20,000 litres and the spirit still at 8,500 litres, giving an annual capacity of 1.8 million litres of pure alcohol. Balblair uses unpeated malt and ferments for longer than many distilleries, contributing to the fruity ester development in the new make. Maturation is in ex-bourbon and ex-sherry casks. The 12 Year Old is primarily ex-bourbon; the 15 Year Old and 18 Year Old use sherry cask finishing.

Tasting Character

Balblair's character is fruit-first: sweet, ripe, and fresh. The spirit shows delicate stone fruits (peach, apricot), sweet tropical notes, and after ageing, a notable honeyed toffee depth. The 12 Year Old carries honeyed citrus and barley sweetness on the nose, with toffee and ripe apple on the palate. The 15 Year Old deepens toward dark fruit, toffee, and chocolate with a honeyed sherry finish. The 18 Year Old shows significantly more complexity: dried fruit, dark chocolate, and warming spice. The overall character is Highland warmth and generosity without heaviness.
